Smart Snacks: Flax Crackers
Smart snacks: Easy and delish!
2 c. golden or brown flax
4-5 c. water
4 garlic cloves
1 jalapeno, seeded
1 Tblsp. Celtic Sea Salt
Soak the flax for about 20 minutes and drain the best you can. Blend (in 2 or 3 batches) with the water in a high speed blender. (You can use a regular blender, just be careful not to overwork the blender. Be sure to add plenty of water!) Pour off each blended batch into a big pot or bowl.On the last batch or so, add in the other ingredients. Blend well then pour in the big bowl and mix well with a spoon.
Pour 2 cups at a time ofthe flax mixture onto dehydrator sheets and dehydrate at 104 or thereabouts for 8-12 hours. you can flip 1/2 way through.
If you do not have a dehydrator, do not despair! You can put the oven on the lowest temp and dry them there. It will take less time as your temp is a bit higher than 104. Still good though!
You can mix in anything you like! Sunflower seeds, sesame seeds, ginger root, curry powder for a nice Indian flavor, parsley, beet juice, cilantro and lime....go crazy!

Granola is something many people love to eat for breakfast, lunch or as a smart snack in between meals. but not all granolas are the same. Stay away from processed granolas that are full of fillers, preservatives, cooked at high temperatures and found in boxes on aisle 5 in the grocery store. These'll cost you anywhere between $3-6 a box (10 oz) and are not the best nutritionally. Make your next granola at home. Better food, better name: gRAWnola!

Makes about 6 cups grawnola
FOR GRANOLA
1 c. pumpkin seeds
1 c. black or tan sesame seeds
1 c. walnuts or pecans
1 c. shredded or flaked coconut
1/2 c. raisins
1/2 c. dried tart cherries
2 c. fresh or frozen blueberries
FOR PASTE
6 Medjool Dates, pitted
juice of 2 oranges
1/4 c. honey, maple syrup or agave nectar
1 Tblsp. Cinnamon
water as needed to blend easily

Mix all the granola ingredients together.
Blend all the PASTE ingredients together and then pour onto the granola. Mix well. Dehydrate at 104 until dry. You can smooth it out before dehydrating and then cut into bars or just dry and then break into pieces. Eat it as is or pour your favorite nutmilk over it and eat it that way. We had this for breakfast this morning and it ROCKED!
Dehydrate your new smart snack completely and then store it in an airtight container. Will keep for a month or so as long as it is dried out well.

Fruit with a hearty and hard skin like oranges, apples, or cucumber make great travel companions that really help out in times of need! When smart snacks are needed so one doesn't go for french fries or a bag of preservative filled chips or a candy bar that has a shelf life of 10 years, these fellas are by your side, always there when you need them! I know. It sounds simple. The best things in life usually are :)
