Oatmeal Vegan Cookies

I make oatmeal flour out of old fashioned rolled oats.  Not necessarily completely gluten free as oats may be processed in a plant that also processed grains that contain gluten, but it is easy to make oatmeal flour using a coffee grinder, blender or food processor.  I recommend a coffee grinder for grinding grains and spices alike.  You can often find them for about $10 new, or a couple of bucks at a thrift store.



This recipe is YUM and works really well as a transitional food item when weaning from high sugar, high fat or heavily processed packaged foods.  


Ok, I have gotten some requests for an oatmeal vegan cookie recipe that was vegan, not raw.  I am working on this cookie in the raw, but for now if you are looking for a great oatmeal vegan cookie, look no further!  Make your oatmeal flour for this recipe; it is easy!


1 3/4 c. oats, ground in a coffee grinder or blender (Old Fashioned work best)
2 c. rolled oats
1 c. agave, maple syrup, or honey (not vegan, of course)
1/3 + 1 Tbsp. coconut oil
1 ripe banana mashed
1 tsp. vanilla extract or seeds scraped from 1 vanilla bean
1 Tsp. baking Soda
1/2 tsp. sea salt
optional 1 c. pecans or walnuts




Place oatmeal flour, baking soda, sea salt in a bowl and combine. In a separate bowl, combine mashed banana, oil, sugar or maple syrup, vanilla and mix well.  Add wet to dry and mix to just combine.  Fold in 2 c. oats and nuts if using.  On an un-greased cookie sheet, place rounded teaspoons full about 2-3 inches apart.  Bake at 350 degrees 9-11 minutes or until dark golden brown around edges.


Use oatmeal flour for all kinds of cookies and baked items. 


Enjoy these oatmeal vegan cookies...and serve to others. No one will know they are vegan. Surprise them!
